NOTE ON FINE-TUNING YOUR RECIPE:
The more fat and sugar the use, the more cake-like the muffins will be. The default settings (a little sweet, moderate egg, moderate fat) are a classic muffin ratio of 1 part sugar, 1 part egg, 1 part fat to 3 parts flour. If you use the maximum settings (Very Sweet, Lots of Egg, Rich) the ratio used is 3 parts sugar, 2 parts egg, 2 parts fat and 3 parts flour, which is pretty much cake. The minimum settings (Barely Sweet, No Egg, Bare Minimum) uses 2 parts sugar and 1 part fat to 12 parts flour, which is more of a scone or biscuit than a muffin.
They're all good, just know what you want and you won't be disappointed.
