Custom Pancake / Waffle Recipe

SMALL BATCH ::barely sweet :: moderate egg :: bare minimum fat

Mix Wet Ingredients: Whisk 1 egg with 24g granulated sugar (2 tablespoons). Whisk in 14g (1 tablespoon) vegetable oil. Whisk in 1 cup buttermilk.

Add Flavorings: Stir in 2 mashed bananas. Stir well until smooth.

Add Dry Ingredients: Combine dry ingredients: 88g (about 3/4 cup) whole wheat flour, 88g (about 3/4 cup) all purpose flour, 3 teaspoons baking powder, 1/4 teaspoon baking soda, 1/4 teaspoon salt. Stir the dry ingredients into the wet ingredients briefly until just incorporated. Add a little more liquid to reach a good pouring consistency if needed.

Bake: If possible, allow batter to rest for half an hour. Add more liquid if neccessary to achieve desired pouring consistency. Make puddles of batter on a pre-heated skillet. When the first side is done, flip the pancakes and cook on the other side. Or for waffles, preheat your waffle iron and bake according to the manufacturer's directions.
